It is a sparkling wine that originates from pure Pinot grapes coming from a single vineyard. The altitude and south-western aspect give us grapes of a perfect acid balance. The coppery colour comes from the brief contact with the skins during the static draining in the press. The drainings are then fermented in steel vats at low temperatures. The bottle fermentation strictly applies the Metodo Classico, ageing “sur lies” for never less than 24 months.
